Executive Chef - Dan Purvis


Chef Purvis' passion for food and wine is  exemplified in the dishes he creates, his love of ingredients and the culinary road he has traveled. Dan has worked in some of the finest kitchens in North America. 

Dan hails from Ontario where he completed his Culinary studies at Niagara College and from there went on to complete his Red Seal certification. 

Dan's career began at the Riverbend Inn & Vineyard in Niagara-on-the-Lake and from there Dan moved West where he joined the brigade at the Rimrock Resort's Eden Restaurant. After a stint behind the stoves at Eden Dan moved on to work in the AAA 5 Diamond Newport Restaurant at the Fairmont Southampton in Bermuda. After several seasons in the Caribbean, Dan longed for a return to the West and enjoyed stints at Mission Hill Family Estate Winery's Terrace Restaurant and The Banff Centers's Three Ravens Wine bar. Most recently Dan was the Head Chef at the well know Banff eatery Coyote's Restaurant.

With Dan's well rounded culinary background, knowledge of local cuisine and love of the mountains we look forward to welcoming him as he takes over the stoves at Tapas.
